A Great American Favorite Made More Favorably; Healthy Meatloaf!

The good news is though; we have a recipe that allows you and the family to continue to enjoy this favorite tradition, while remaining health conscious. And, did we mention that this recipe doesn’t alter any of the reasons why we fell in love with this loaf of meat in the first place? It’s true, it is still cheap and good. We just added one more reason to love it, healthy!

| Ground beef, extra lean | 1 pound |
| Tomato paste (4 ounces) | ½ cup |
| Onion, chopped | ¼ cup |
| Green peppers | ¼ cup |
| Red peppers | ¼ cup |
| Tomatoes, fresh, blanched, chopped | 1 cup |
| Mustard, low sodium | ½ teaspoon |
| Ground black pepper | ¼ teaspoon |
| Hot pepper, chopped | ½ teaspoon |
| Garlic, chopped | 2 cloves |
| Scallion, chopped | 2 stalks |
| Ginger, ground | ½ teaspoon |
| Nutmeg, ground | 1/8 teaspoon |
| Orange rind, grated | 1 teaspoon |
| Thyme, crushed | ½ teaspoon |
| Bread crumbs, finely grated | ¼ cup |
Directions
- Mix all ingredients together.
- Place in 1-pound loaf pan (preferably a pan with a drip rack) and bake covered at 350°F for 50 minutes.
- Uncover pan and continue baking for 12 minutes.
